Cooking for a single person can be quite challenging. After a twelve-hour day between my commute and my time in the office, I rarely feel like coming home to cook so I try to plan my meals in advance, cooking on Sunday’s and Wednesdays, and alternating left overs throughout the week. This weekend I found a roast kit complete with potatoes, carrots, onions, and celery. It was the perfect size for me and made probably enough for three meals.
I just dropped everything in the baby crockpot, added water, and let it cook while I was busy doing other things. At dinner time the meat was falling apart tender and I just had to add some corn as an additional veggie. Of course on Wednesday I will have to come up with something else for the rest of the week, but that is all part of the adventure. Maybe I will use my buffet server crockpots next time.
